Dr. Kathryn E. Peters holds a B.S. in Environmental Science from Oklahoma State University, dual masters degrees in Latin American Studies and Community and Regional Planning from UNM, and a Ph.D. in Anthropology from Vanderbilt University. Her research in rural Paraguay examines how farmers defend their way of life amid systems that privilege transnational agribusiness and illicit markets, focusing on the coalitions they build with international allies and their ethics-of-care practices.

She has extensive experience bridging research and practice, including work as an agroforestry Peace Corps volunteer in Paraguay, an AmeriCorps volunteer on a community farm in Albuquerque, and on SNAP-Ed and NIH-funded research and educational initiatives at UNM’s Prevention Research Center.

Dr. Peters is committed to teaching and mentoring students on issues of social justice, environmental stewardship, and community resilience, with a particular focus on food systems and agriculture. She is dedicated to helping students connect classroom learning with real-world challenges and opportunities.
